WHY NATURAL WINE?

(to be clear: you deserve it)

 By Real People

Each of the wines at Cork have a story behind them – of a farmer, a small family, a dedicated solo artist or an entire village – creating something personal, authentic, and delicious.

We are proud of the friendships and field trips which have inspired our wine list: preferring dirty hands, full tables and empty bottles to suits, ties and trade shows.

Simply put: our wines are made by people we care about, who care deeply about what they do.

FOR Real People

Natural wine is unpretentious; bottles may be unfamiliar, rare, limited and one-of-a-kind but never “stuffy.”  That’s why the average bottle on our shelves is under $25.

Some people cellar bottles with no intention of ever opening them. Some people feel that the price is the most important indicator of quality on a bottle. We are not interested in catering to some people.

Our people just want to drink good wine. We raise a glass to them!

For the Earth

The best winemakers care deeply about the earth and know that grapes are grown in harmony with nature, not isolation. That’s why the wines we feature come from vineyards where the grapes are grown organically or biodynamically, without artificial irrigation, pesticides, chemicals or fertilizers.

Treating the vineyard holistically as one living ecosystem creates extremely high-quality, expressive, and unique wines, and helps to prevent ecological damage such as pollution, erosion and drought.

For the Body

Additives, preservatives, artificial flavors and colors, added sugars - What? You read ingredient labels to avoid this stuff in your food, so don’t accept them in your wines! Natural wines are truly grapes + time.

Our winemakers focus on varietal expression, harvesting their crop when it tastes best, not when the sugar content is high enough to result in unnaturally boozy plonk. They use natural yeast, spontaneous fermentation, and minimal intervention, which means you’re drinking wine the way it has always been made, before big companies started pouring sulfites and oak extract into their mix to rob their product of any variation or character.  This is not a “fad.” This is earnest and honest wine-making: small production, unadulterated, and delicious.

And Everyone

Cork, and the natural wine movement, is all about community. Our producers give back to the environment, to their teams, to their families and friends. We aim every day to do the same by offering shareable, unexpected, fresh and local fare, local libations, and of course, wines to suit every palate.

Our space welcomes all, encourages curiosity, and embraces comfort. We see mealtimes as an opportunity for relaxation, connection, and care. When we highlight ingredients, farmers, and products we believe in, we know that we are offering the very best to our family, friends and neighbors.

Sharing is our entire ethos.

Thank you for your continued support and trust.

Let’s eat, let’s drink, let’s get real.
